This is a fun, tasty summer and early fall dessert that won't make you feel guilty! It includes some fresh fruit and basil. Enjoy!
1 honeydew melon
6-7 fresh basil leaves
1/4 cup lime juice
1/4 cup simple syrup
Cut up the honeydew into small chunks and place them in a food processor. Add the basil leaves, lime juice, and simple syrup. Continue adding lime juice or simple syrup until it tastes how you like. Pour into popsicle molds and freeze. This recipe also makes a great slushy. After blending the above ingredients, pour them into a pitcher, then grind up a tray of ice cubes in the processor. Combine the broken ice with the honeydew concoction.
Simple syrup is an easy 1:1 mixture. Combine 1/4 cup sugar with 1/4 cup water. Stir until the water is clear. I like to make a large mixture ahead of time to keep ready in the fridge.
